Eggs: What the Cholesterol Story Gets Wrong
Should you eat eggs? Yes — and the whole thing. Here is what the science actually says about cholesterol, lipoproteins, and why the yolk is not the villain it was made out to be.
The question worth answering
Eggs are among the most nutritionally complete whole foods available — and among the most misunderstood. Decades of cholesterol anxiety have led people to discard the yolk, eat only the white, or avoid eggs entirely.
The Portico answer is direct: eat eggs, eat the whole thing, and here is why.
Three lenses
Portico's Sage domain is built on three simple principles: eat food, eat less, and mostly plants. Eggs hold up well against all three.
Eat food. Real, whole food — minimally processed, nutritionally intact. An egg is exactly that. The white delivers protein. The yolk delivers fat, fat-soluble vitamins (A, D, E, K), choline essential for brain and liver health, and the cholesterol that has attracted so much unfounded concern. Separating the white from the yolk and discarding one half is a nutritional subtraction, not an upgrade. The default is the whole egg.
Eat less. Each egg contains approximately 6 grams of protein. The body can absorb and use roughly 25 to 30 grams of protein in a single sitting. One to two eggs at a meal — paired with another protein source — is appropriate and well-utilized. For daily targets: roughly 1 gram of protein per kilogram of body weight as a baseline, increasing to 1.5 grams on active training days.
Mostly plants. This does not mean no animal products. It means animal products should earn their place in a plant-forward diet. Eggs earn theirs clearly.
Egg protein is a complete protein — it contains all essential amino acids in ratios closely matched to what the human body requires. Of particular significance is leucine, the branched-chain amino acid that acts as the primary signal for muscle protein synthesis. Animal proteins — eggs and dairy especially — are among the richest dietary sources of leucine. Plant proteins are often lower in leucine and may be incomplete. For anyone using protein to maintain or build lean mass, this distinction matters.
Cholesterol: what the body actually does
The core misunderstanding: eating cholesterol is not the same as raising your blood cholesterol.
Cholesterol is not a toxin. It is the structural foundation of every cell membrane in your body, the raw material for hormones including testosterone and estrogen, and a critical input for bile acids, nerve insulation, and vitamin D. You cannot function without it.
Your body produces roughly 80 percent of its own cholesterol. The remaining 20 percent comes from food — and even that dietary fraction is handled with tight regulation. Most dietary cholesterol is not directly absorbed. When intake rises, endogenous production typically falls to compensate; when it falls, the body makes more.
For most people, the cholesterol in eggs does not meaningfully alter circulating cholesterol levels.
What actually matters: particles, not totals
Even the cholesterol number on a blood panel tells only part of the story.
Cholesterol cannot dissolve in blood. To travel through the bloodstream, it must be packaged inside protein carrier vehicles called lipoproteins — delivery trucks that carry cholesterol and fat as cargo. The LDL-C number on a standard panel measures the cholesterol cargo riding inside those trucks. It does not count the trucks themselves.
The number of trucks is what matters. Too many lipoprotein particles circulating means more chances for them to penetrate the arterial wall, oxidize, and begin the slow process of plaque formation that leads to heart attacks over decades. The right measure is ApoB — apolipoprotein B — which counts LDL particles directly. Every truck carries exactly one ApoB molecule, so counting ApoB is counting trucks. It is as simple and inexpensive as a standard cholesterol test. It is rarely ordered.
A second particle worth knowing: Lp(a) — lipoprotein little-a — is a variant truck with an extra protein attached that makes it stickier, more inflammatory, and more prone to driving plaque than ordinary LDL. About one in five people carry a high Lp(a) level. It is largely genetic, needs to be measured only once, and is almost never tested.
Dietary cholesterol from eggs has a distant connection to cardiovascular risk for most people precisely because eating cholesterol does not meaningfully increase ApoB particle count.
The exceptions
Two groups should think more carefully.
Hyperabsorbers absorb dietary cholesterol more efficiently than average. If your ApoB remains elevated despite a clean diet, discussing hyperabsorption testing with your clinician is worthwhile. For those individuals, limiting egg yolks may be appropriate as part of a broader management plan.
High Lp(a) carriers have a genetically elevated baseline of a stickier, more atherogenic particle. While dietary cholesterol does not primarily drive Lp(a) levels, those with elevated Lp(a) or a strong family history of early cardiovascular disease should understand their overall particle burden and manage risk more actively across all dimensions — including tracking ApoB alongside Lp(a).
For everyone else: the whole egg is not a problem — it is one of the most nutritionally complete foods available, and a genuine blessing to have in your diet.

The cholesterol narrative around eggs misread the science — conflating dietary cholesterol with circulating particle count, and particle count with inevitable disease. The egg is real food. It delivers a complete protein with leucine. It provides fat-soluble vitamins and choline that the white alone cannot supply. It fits cleanly within all three Sage principles.
Know your ApoB. Know your Lp(a). If you are in a high-risk category, let those numbers shape the nuance. For most people, the egg is exactly what it appears to be.
